Eight thousand years of receiving guests. The manual is the recent part.
Marriott's standard began at a root-beer stand in Washington in 1927. Ours began at
the eastern edge of the Black Sea, several thousand years before anyone thought to
write hospitality down. When you hire us, that is what you are hiring.

The offer, before anything else
Brand standards are built around the operating process. This one is built
around the guest.
A franchise sells a system for making a hotel repeatable. We make one worth
choosing. Those are different products, and only one of them can be copied by the
building across the road.
Five things that transfer
What actually arrives with us
Tbilisi. Narikala has watched the road in and out for fifteen centuries.
01
History
Georgia sits where Europe and Asia meet, on the roads that carried trade between
them for three thousand years. A country on a crossroads either learns to receive
strangers well or is erased by them. Georgia learned, and then kept practising.
What came out of that is a hospitality tradition older than hotels, restaurants
and service training put together — and one that was never designed to be sold.
That is exactly why a guest feels it and cannot say why.
The qvevri. Buried to the neck, it has made wine here for eight thousand years.
02
Wine
Winemaking begins here. The archaeological record runs to roughly eight thousand
years, and in 2013 UNESCO inscribed the qvevri method — fermentation in clay
vessels buried in the ground — on its Intangible Cultural Heritage list. Georgia
has some five hundred indigenous grape varieties, about a sixth of everything
grown on earth.
We are not asking you to find that interesting. We are telling you it is a wine
list no competitor within five hundred kilometres can put on a table — and that
you could start buying it this quarter, because Georgian qvevri wines are on
LCBO shelves today.
Khinkali, lobio, badrijani, pkhali. None of it has a substitute on a menu.
03
Cuisine
Georgian food is its own culinary tradition, not a regional variation on someone
else's: bread baked against the wall of a clay oven, walnut and pomegranate where
other cuisines reach for cream, herbs by the handful, and dishes — khachapuri,
khinkali — that have no equivalent anywhere else on a card.
Canada has already voted. A Georgian restaurant in Toronto holds a Bib Gourmand
in the Michelin Guide. The demand is proven. What is missing is a hotel that
knows what to do with it.
Coast to five-thousand-metre peaks in two hundred kilometres.
04
Geography
The Black Sea coast and five-thousand-metre Caucasus peaks sit two hundred
kilometres apart, with ski country, lake country, wine country and mineral-spa
towns in between — all inside a country smaller than New Brunswick.
That density is why our portfolio is unusually broad for its size: ski resorts in
Gudauri and Bakuriani, waterfront in Batumi, lake and wine resorts in Kakheti, a
spa hotel in Borjomi, city hotels, aparthotels and boutiques. Very few operators
anywhere have run that many formats in twelve years. We have, because they were
all within a three-hour drive.
Old Tbilisi. The table is laid before anyone asks.
05
Hospitality
The Georgian phrase is stumari ghvtisaa — a guest belongs
to God. It is not a line for a wall. It is an obligation, and it is why the table
is laid before anyone asks whether the visitor is staying for dinner.
Its working form is the supra: a table with a structure, someone
who leads it, an order to the toasts, and food that arrives all at once instead of
in courses, so nobody waits and nobody eats alone. A service script buys you forty
minutes. A supra holds a room for two hours — and the gap between those two numbers
is the food and beverage line on your profit and loss.
Nobody can franchise this. That is the entire point.
What we are actually selling
Seventy-two per cent of Canadian hotels have no manual to fall back on.
Good.
Seventy-two per cent of Canadian hotels are independent by property count. No
franchisor tells them what breakfast looks like. Most of them treat that as a problem
and compete with the branded box down the road on price, because nothing else
separates them.
It is not a problem. It is the only position from which a hotel can be genuinely
preferred rather than merely acceptable. Brand standards are written to make a hotel
repeatable, and they work — that is why they exist, and why we negotiate them for
owners who want one. But repeatable is the opposite of memorable, and the guest gets
a room that is identical in Calgary and in Kitchener.
What we bring instead is a kitchen with a reason to exist, a list nobody nearby can
reproduce, and a way of receiving people that took eight thousand years to make and
cannot be bought as a licence. Come to us and we will teach your team how it is
actually done — not how it is documented.
None of it is a theme. No Georgian name over the door and no costumes. It is how the
food and beverage department is sized against real captive demand, how the list is
bought, how the dining room is run, and what happens in a guest's first four minutes.
All of it sits inside an independent hotel, a wine-country resort, or the food and
beverage department of a branded property currently carrying that department at a
loss. The rooms can still fly a flag. The reason people choose the building does not
have to come from the flag.

Bring us the building. We will bring the reason people choose it.
